- 为了更准确地掌握在芽菜萌发期间各营养成分及内含物达到峰值的时间,在已测定11 mg.L-1 Al(NO3)3.9H2O溶液、0.8 mg?L-1 MgCl2.6H2O溶液、20 mg.L-1GA3溶液、10 mg.L-1 MnSO4.H2O溶液为黑豆种子的最佳萌发条件下,进一步测定黑豆芽菜的游离氨基酸、蛋白质、总黄酮、还原糖、VC的含量变化。结果表明:镁离子处理(0.8 mg.L-1)对应的游离氨基酸含量在第5天达到最大值,镁离子处理(0.8 mg.L-1)对应的蛋白质含量在第4天达到最大值,干种子中还原糖的含量最大,锰离子处理(10 mg.L-1)对应的总黄酮含量在第1天达到最大值,镁离子处理(0.8 mg.L-1)对应的VC含量在第1天达到最大值。
- Abstract:
- In order to more accurately grasp the time of various nutrition ingredient and the inclusion to peak during sprouts germinate,the content changes of free amino acids,protein,total flavonoids,reducing sugars,vitamin C of black bean sprouts were further researched under the measured optimum condition of black bean seed germination of 11 mg.L-1 Al(NO3)3.9H2O,0.8 mg.L-1 MgCl2.6H2O,20 mg.L-1 GA3,10 mg.L-1 MnSO4.H2O.The results showed that the maximum free amino acid content with Magnesium ion processing(0.8 mg.L-1)was on the fifth day,the maximum protein content with Magnesium ion(0.8 mg.L-1)processing was on the fourth day.Reducing sugar content of dry seeds was maximum.The maximum total flavonoids content with Manganese ion processing(10 mg.L-1)was on the first day,the maximum vitamin C content with Magnesium ion processing(0.8 mg.L-1)was on the first day.
