毛樱桃果实品质及抗氧化能力测定与分析

- 为丰富我国寒冷地区果树栽培品种,选取毛樱桃作为试验材料,测定其成熟期单果重、纵横径、可滴定酸、类黄酮、总酚、花色苷的含量及抗氧化能力,并分析果实各性状之间、果实活性物质与抗氧化能力之间的相关性。结果表明:毛樱桃果实单果重为1.05 g,可滴定酸含量为0.88%,类黄酮含量为3.40 mg·g-1,总酚含量为1.63 mg·g-1,花色苷含量为23.24 mg·100 g-1,清除DPPH自由基的能力较高且高于清除·OH自由基的能力。可滴定酸含量与总酚和花色苷的含量均呈极显著正相关性。类黄酮含量与清除·OH自由基的能力呈极显著正相关性,是清除·OH自由基最主要的活性物质。
