醋栗果实发育中有机酸和类黄酮含量及体外抗氧化活性的动态分析

- 为促进醋栗资源的合理利用,本文以茶藨子属植物醋栗“坠玉”品种为试验材料,测定果实生长发育过程中纵横径、可滴定酸、类黄酮含量及体外抗氧化活性的变化。结果表明:醋栗果实生长发育过程中,果实可滴定酸含量随果实增大而增加;果实类黄酮含量随果实成熟逐渐下降;醋栗果实具有极强的体外抗氧化活性(DPPH、FRAP和?OH)。相关性分析显示,类黄酮含量与DPPH自由基清除能力呈极显著正相关性(P<0.01),与FRAP自由基清除能力呈显著正相关(P<0.05),类黄酮含量与清除?OH自由基能力相关性最弱。
