- 磷脂是一种天然的生物表面活性剂,广泛分布于动植物界,目前主要应用于食品医药领域。大豆中的磷脂含量较为丰富,是磷脂的主要来源之一,为促进大豆磷脂在各领域的应用,该文介绍了大豆磷脂的一些理化性质和重要的生理功能,分析了分离大豆磷脂的比较常用的两种方法,并对大豆磷脂的应用进行了概述,以期为进一步的研究提供基础数据。
- Abstract:
- Phospholipids is a natural biological surfactants which is distributed in plants and animals widely,and its mainly used in food and pharmaceutical fields.Phospholipids is rich in soybean,so soybean became one of the main source.In order to promote the application of phospholipids in various fields,some physicochemical properties and important physiological functions were introduced,two commonly used methods for isolating soybean lecithin were analyzed and compared briefly,an overview of the application of soybean lecithin were provided the basic data for further study.
