摘要:
采用国标法对合肥市2个超市售鸭肝进行细菌总数、大肠菌群及常见的一些食源性致病菌等微生物指标检测鉴定。结果表明：从随机抽检的180份鸭肝中，菌落总数和大肠菌群的总超标率达32.2％ 和15.8％,分别检出不合格的大肠菌群36份；金黄色葡萄球菌4份；沙门氏菌13份；志贺氏菌2份。说明合肥市超市售鸭肝的卫生质量急需提高，生产加工水平亟待改善。
Abstract:
Based on the criteria of national standards，180 samples from livestock products in Hefei supermarkets were examined for aerobic bacterial count，Coliform bacteria and four categories of foodborne pathogens . The results showed that the overall positive rate of aerobic bacterial count and Coliform bacteria reached 32.2％ and 15.8％ on 180 pieces of detected ,samples on salmonella was 7.2%, Staphylococcus aureus was 2.2% , Shigella was 1.1%. O157∶H7 were not found in about 180 samples. It is seriously necessary to improve the quality of duck live hygiene and enhance the hygiene level of production and processing．
