- 为探明红茶抗氧化机理,以福建省15种红茶为试材,对其生化成分和抗氧化活性进行测定,并应用灰色关联法分析了红茶生化成分与抗氧化活性间的关联性。结果表明:不同品种之间生化成分和抗氧化活性差异较大;各生化成分对茶叶自由基清除率的影响为:多酚类物质>茶黄素>黄酮类物质>水浸出物>氨基酸;抗氧化能力为:政和大白>福云6号>菜茶>金观音。
- Abstract:
- In order to prove antioxidant mechanism of black tea,taking 15 varieties of black tea as experimental materials,biochemical composition and antioxidant activity were determined,the relevance of biochemical composition and antioxidant activity were analyzed by gray correlation method.The results showed that there was great difference in biochemical composition and antioxidant activity of different varieties,the effect of biochemical composition on tea free radical clearance was polyphenols>theaflavins>flavonoids>water extract>amino acids.The antioxidant capacity was Zhenhedabai>Fuyun 6>Vegetable tea>Jinguanyin.
