- 抗氧化功能是维生素E 的一种基本功能.维生素E 特殊的化学结构与性质使得它既能抗油脂自动氧化, 又具有一定的淬灭1O2 的能力。本文根据目前公认的油脂氧化机理, 就维生素E 抗油脂氧化的机理与具体功能进行了研究, 并且介绍了一些常见的油脂中的PUFA 与维生素E 的水平。
- Abstract:
- Antioxygenation is a general function of vi tamin E .The particular chemical structure andproperty of vitamin E make it an oil autoxidation inhibi ter and a single oxy gen quencher .According tothe universally accepted oil oxidant ion mechanism , the oil antioxidation mechanism and concrete function of vitamin E are researched in this paper .Besides , the PUFA level and vi tamin E level of sometypes of common oil and fat are introduced as well.
