- 向日葵是世界上重要的油料作物和经济作物之一,其籽实加工的葵花籽油富含不饱和脂肪酸及多种生物活性成分,是一种健康植物油,备受消费者青睐。食用油的营养成分和风味是决定消费者购买倾向的关键因素。现对葵花籽油中营养和风味组成成分及其影响因素的研究进展进行了系统概述,重点从成分组成的分类、应用领域、加工工艺和贮藏保鲜技术进行阐述,并对葵花籽油开发利用前景及研究方向进行展望。
- Abstract:
- Sunflower is an important oil crops and cash crops in the world, the oil made of sunflower seeds is rich in unsaturated fatty acids and has a variety of bioactive components, which is a kind of healthy vegetable oil and favored by consumer. The nutrition contents and flavor of the edible oil are two key factors in determining consumers′ purchase intention. In this paper, the research progress of nutrient and flavor components and their influencing factors in sunflower seed oil was systematically summarized, focusing on the classification, application fields, processing technology, storage and preservation technology of sunflower seed oil. And provide prospects and research directions for the development and utilization of sunflower seed oil.
