- 为了研究不同产地的黑木耳总膳食纤维和粗脂肪含量的差异,采用酸碱消煮法和索氏提取法测定了东北、丘北、金江、临沧、凤庆5个不同产地的黑木耳样品中总膳食纤维和粗脂肪的含量,并用气相色谱技术分析了不同样品油脂中脂肪酸的组成。结果表明:产自凤庆的黑木耳样品总膳食纤维含量最高,为42.53 g·(100 g) -1;产自金江的黑木耳粗脂肪含量最高,为1.82 g·(100 g) -1;供试样品油脂成分中,油酸和亚油酸所占的比重均较大,亚麻酸组成含量较少。
- Abstract:
- In order to study the content of crude fat and total dietary fibre of Auriculaia auricula in different regions.The content of crude fat and total dietary of Auriculaia auricula from Northeast,Qiubei,Jinjiang,Lincang and Fengqing were determined by soxhlet extraction and acidbase lixiviation method,and the fatty acid composition of black fungus were analyzed by gas chromatography.The results showed that the Auriculaia auricula from Fengqing region had the highest total dietary content of 42.53 g·(100 g) -1.The Auriculaia auricula from Jinjiang area had the highest crude fat content of 1.82 g·(100 g) -1.The composition of oleic acid and linoleic acid content were more,and linolenic acid content was less in the sample grease composition.
