- 介绍了质量管理的相关概念,并指出我国中小型食品企业质量管理现状体现在质量观念淡薄、质量管理技术落后、质量管理人员素质不高和食品企业的质量管理体系实施后相关监督机制不完善4方面问题。并提出培育企业文化、提高企业质量管理意识、加强制度建设、规范各项管理、提高质量管理水平、发展质量管理教育、培养质量管理人才、加强HACCP管理体系建设、与国际质量管理体系接轨、以技术创新和管理创新为基础全面提升质量管理等对策。
- Abstract:
- With the improvement of people’s living standard, food safety is increasingly concerned in our nation. This paper introduces the concept of quality management, and points out the shortcomings that exist in quality management in Chinese small and medium-sized food enterprise from four aspects, such as: weak in the understanding of quality, lag in quality management technology,the quality of management personnel being low and imperfect of relevant supervision mechanism after quality management system carrying out.Thus, it is suggested that Chinese small and medium-sized food enterprise should cultivate enterprise culture and improve enterprise quality management consciousness, strengthen the construction of system and regulate the management, improve the quality management level,develop the education of quality management and train personnel,strengthen the construction of HACCP management system and achieve international quality management system standards,comprehensively improve quality management based on the innovation of technology and management, etc.
