- 介绍了具有寒地特色的酒庄葡萄酒生产工艺流程, 指出酒庄葡萄酒生产过程的关键工艺控制: 适当降低发酵温度来保护果香, 加强低温冷处理促进酒石酸盐沉淀以达到降酸的目的。
- Abstract:
- Wine pr ocessing technolog y in co ld area w as intr oduced and its key techniques wer e pointed out. Tho es w ere :Pro tecting fruit a roma thoug h aptly reducing fe rmentation temperature , reducing aced by decreasing tempe rature to promo te tartr ate precipita tion and keeping chilling temperature to promo te tart rate precipitatio n to reduce acid.
