酿酒葡萄‘品丽珠’芽变早熟株系酚类物质特征分析

- 为选育能避开宁夏贺兰山东麓早霜冻害、具特定优质酚类谱的早熟酿酒葡萄品种,解决该产区葡萄早霜采收导致的酚类积累不足、品质受限问题,阐明芽变转色期改变对果实品质及非花色苷酚类代谢的调控效应,以宁夏贺兰山东麓产区的红色酿酒葡萄‘品丽珠’为试材,通过筛选早熟、中早熟和晚早熟3个芽变株系,系统比较了其果实品质及非花色苷酚类物质的差异。结果表明,早熟株系果实呈现“大粒富酚”表型,单果纵、横径分别增加22.9%和17.5%,总酚、单宁及花色苷含量分别激增158.2%、169.8%和60.9%,但穗重降低37.7%。中早熟株系表现为“重穗高糖酸”,穗重与糖、酸含量分别提升18.7%、13.4%和57.1%。芽变导致了酚类代谢特异性重构:早熟株系的关键单体表儿茶素没食子酸酯与芪类(白藜芦醇)含量分别提升892%和57.6%,杨梅素含量剧增159.7%;但其酚酸类总量和芦丁、原儿茶酸含量分别下降19.2%、44.8%和48.1%。中早熟与晚早熟株系的黄酮醇类总量则分别下降25.9%和34.4%,酚类物质总含量降幅达97%和12.9%。综上,芽变驱动的转色期改变精确调控了酚类代谢分配,明确了不同早熟芽变株系的品质与酚类物质特征,为宁夏贺兰山东麓产区抗早霜、高品质酿酒葡萄新品种选育及功能型葡萄酒开发提供了直接的理论依据与物质筛选靶标。
